The Best Keto French Toast Casserole

Introduction

French toast has ALWAYS been my favorite breakfast treat. I can remember it being a part of that special Saturday morning breakfast as a kid, and I have loved it ever since. Waffles are great and pancakes are awesome, but there is nothing better than some good French Toast.

Luckily, this 100% keto version means that I can still enjoy an old favorite, just without the carbs and sugar that used to come with it!

But, being French Toast isn’t the only thing this keto French Toast has going for it. Equally as great is that this is a casserole! Casseroles are great because they are always so easy but delicious. 

This easy  Keto French Toast casserole can be thrown together for a get-together brunch, a quick weekday breakfast, or for a special-occasion (like Mothers Day Brunch!).

Even though we love eggs for breakfast, I should point out that this French Toast casserole does NOT have that eggy taste that plagues most keto-breads. Instead, the only flavors you’ll taste is that sweet, sweet French Toast taste you know and love.

Ingredients To Make French Toast Casserole

This recipe is really as easy as making French Toast! Of course, you have a couple of choices to make as far as what bread you will use.

We opted to use our perfect new keto bread and it worked perfectly with this recipe. We cannot recommend this keto bread enough. 

Alternatively, you can opt to use any other keto friendly bread, whether it be homemade or store-bought. Your bread of choice will work wonderfully for this recipe!

  • Keto Bread – did I mention our new keto bread? Its amazing!
  • Milk of choice – We opted to use almond milk but feel free to use the milk of your choice. Oat milk is another that would work well.
  • Lakanto Powdered Sweetener – All of Lakanto’s products are amazing! Their powdered sweetener is a must for this keto French toast casserole. 
  • Heavy Whipping Cream – Or full fat canned coconut milk for a fairy free version!
  • Cinnamon – This is a must for any sweet tasting breakfast! Or substitute with Pumpkin Spice for a fall flavor!
  • Almond Extract – Enhances the flavor!
  • Vanilla Extract – Gives a nice light vanilla flavor. 
  • Pinch of nutmeg – A little spice makes everything nice.

How To Make Keto French Toast Casserole

Cut the bread into cubes and toast under the broiler.

In a mixing bowl, whisk together the eggs

Add in heavy whipping cream

Mix in cinnamon, almond milk, powdered sweetener, nutmeg, almond extract, and vanilla extract.

Pour the wet mixture over the bread cubes, and allow to soak in the fridge for 2-3 hours.

Preheat the oven to 350 degrees. Bake the casserole for 35-40 minutes. Let cool for a few minutes, garnish with powdered sugar substitute and fresh berries before serving.

Best Toppings For French Toast

We used Lakanto’s powdered sweetener and some of our favorite berries, but of course there is no limit to the toppings you can add to your keto French Toast casserole. Walnuts, pecans, or even a keto jam would be great with this keto French toast casserole.

How To Store Keto French Toast Casserole

If you end up with some leftovers (I applaud your willpower), the best way to keep this keto French toast casserole is to place it in an airtight container and place it in the fridge where it will last for about three days. If you opt to freeze your leftovers, they will keep for about 2 months in the freezer.

Then, when you’re ready to have your leftovers, just pop them in the microwave or preheated oven and heat until warm. To keep this French toast nice and moist, pour a little extra milk over the top of it before reheating.

1 Loaf of keto bread premade

Directions
