Keto Mac and Cheese

Mac and Cheese is the ultimate comfort food. It’s so simple yet so delicious. But, if you’re trying to stay low carb, you might have thought that you would never again be able to indulge in the cheesy goodness that is Mac and Cheese. If that’s you, I have good news: low carb Mac and Cheese is here!

Using keto-friendly noddles: Shirataki Noodles

The secret to this dish is Pasta Zero. Fair warning: these noodles definitely are not like traditional pasta. They are a bit more firm and have a different texture. However, they are delicious if you prepare them correctly! There is definitely a trick to make these noodles taste delicious. When you open your package of Pasta Zero (or whatever Shirataki noodles you use), you’ll immediately notice that they smell… natural. They don’t necessarily smell bad, just different.

How To Make Keto Mac and Cheese:

Once you open your package of noodles, pour all of the contents into a colander (the noodles are packaged in liquid) as shown in photo one. Once all you’re left with are the noodles, rinse them with cold water for about 90 seconds. After you’ve rinsed them, boil them for about three minutes (as shown in photo two) and then toss them back into the colander to strain. Finally, toss them into a skillet for eight to ten minutes and fry them over medium heat, as shown in photo three. This step is crucial! Shirataki noodles are full of moisture, and frying them helps to evaporate some of this moisture. Once they start to fry, they will start to release a lot of steam into the air (it’s not smoke, don’t worry). Just be sure that you don’t over cook the noodles because they will start to become crunchy, and crunchy noodles are never good!

Once you’ve prepared your noodles, now would be the time to prepare any add-ins you might like. As you’ll see in photo four, we cooked up some bacon and tossed it into our Mac and Cheese and as you might have guessed, it was scrumptious!

Finally, it’s time to create the cheese sauce that will make these noodles come alive! This cheese sauce is super easy to make. You start by bringing one cup of heavy cream to a boil. Then, add in a little bit of salt, some pepper, and some garlic powder as shown in photo five. Then, add in 4 oz of cheddar cheese (or about 1 cup if shredded) and combine, as seen in photo six. If you prepared any add-ins, toss them in now. It will be easier to add them now verses later. Next, mix the cheese sauce and noodles together, as shown in photo seven, and serve! Finally, photo eight is the money shot – the finished product!

2 packages Pasta Zero (or other Shirataki Noodles)
4 oz Cheddar Cheese (1 cup shredded cheese)
1 cup heavy cream
Salt to taste
Pepper to taste
Garlic powder to taste

Directions

Pour Pasta Zero into colander and rinse under cold water 90 seconds

Boil noodles for three to five minutes, strain.

Pan fry noodles over medium heat for eight to ten minutes to evaporate moisture, set noodles aside.

Bring 1 cup heavy cream to a boil, reduce to simmer and add in cheddar cheese, salt, pepper, and garlic powder (add in bacon or any other add-ins at this time).

Stir together until cheese is completely melted and combined with heavy cream.
