Keto Chocolate Snowball Cookies
Earlier this month we created a Low Carb/Keto version of the classic pecan snowball cookies. Now, we are stepping it up a notch and came up with these buttery chocolate snowball cookies for you to add to your baking list during the holidays!
If you’re on a keto or low carb diet, your going to love me for this chocolatey recipe.. trust me. These holiday cookies are very quick and simple to make and best of all you honestly can’t even tell that it’s sugar free and low carb. My dad, who isn’t on the keto diet, has the biggest sweet tooth and he ate one after another and couldn’t tell the difference between these and a regular sugary cookie.
How To Make Keto Chocolate Snowball Cookies:
- Make the dough by blending together the butter, swerve confectioners, unsweetened cocoa powder, and vanilla until creamy. Then blend in almond flour.
- Optional: Mix Lilys chocolate chips in dough.
- Line a baking sheet with parchment paper or silpat. Roll the dough into 1″ balls in the palm of your hand. Bake for 10 minutes.
- Immediately roll the cookie balls in swerve confectioners sugar for first coating. Allow the cookies to cool completely and then roll them in the confectioners sugar again.
Allow to cool completely before storing in an airtight container at room temperature.

Ingredients
Cookies
- 1 stick of butter
- 1/2 cup lakanto powdered sugar, or swerve confectioners
- 1/4 cup unsweetened cocoa powder
- 2 cups almond flour
- 1 tsp vanilla extract
- 1/2 cup Lily Chocolate Chips, optional
- Pinch of Salt
Coating
Instructions
- Preheat oven to 375. Line cookie sheet with parchment paper or silpat.
- Blend together butter, lakanto powdered sweetener, unsweetened cocoa, salt, and vanilla extract until creamy.
- Add in the almond flour until dough forms together. Stir in Lilys Chocolate Chips, optional.
- Roll the dough into 1″ balls in the palm of your hand.
- Bake cookies for 8-10 minutes.
- Immediately roll the cookie balls in Lakanto's powdered sweetener for first coating.
- Allow the cookies to cool completely and then roll them in a second coating of the powdered sweetener.
Notes
Allow to cool completely before storing in an airtight container at room temperature.

Why is there more almond flour in the chocolate cookie v. the plain pecan one?

I love this recipe, but am having trouble rolling the cookies in the powdered sweetener immediately out of the oven. The cookies are too hot to handle and the cookies will crumble if handled still hot. Any suggestions?
