Earlier this month we created a Low Carb/Keto version of the classic pecan snowball cookies. Now, we are stepping it up a notch and came up with these buttery chocolate snowball cookies for you to add to your baking list during the holidays!
If you’re on a keto or low carb diet, you’re going to love me for this chocolatey recipe… trust me. These holiday cookies are very quick and simple to make and best of all you honestly can’t even tell that it’s sugar free and low carb. My dad, who isn’t on the keto diet, has the biggest sweet tooth and he ate one after another and couldn’t tell the difference between these and a regular sugary cookie.

Directions

Preheat oven to 375°F. Line cookie sheet with parchment paper or silpat.

Blend together the butter, Lakanto powdered sweetener, unsweetened cocoa, salt, and vanilla extract until creamy.

Add in the almond flour until the dough forms together.
Stir in Lily's chocolate chips, optional.

Roll the dough into 1″ balls in the palm of your hand.

Bake cookies for 8-10 minutes.

Immediately roll the cookie balls in Lakanto's powdered sweetener for first coating.

Allow the cookies to cool completely and then roll them in a second coating of the powdered sweetener.
