Best 90-Second Keto Bread (White Bread)

One of the hardest things about keto is giving up bread. Bread is just sort of one of those things that you don’t realize how much you “need” it until you can’t have it. Almost everything is served on, or with a side of, bread.

 

That struggle is over now though! This 90 second keto white bread will definitely be your new favorite keto bread recipe because it is a total game changer!

 

This keto white bread is so easy to make because all you need is a mug, some common keto ingredients, and a minute and a half of your time. No preheating an oven, kneading dough, greasing a dish, or any of the inconveniences of making bread!

 

Not only is this bread incredibly easy to make, it’s also the best tasting keto bread I have ever tried, and it’ll be the best you’ve ever tried too! This bread comes out soft and fluffy, yet it is also sturdy enough to hold a thick burger. This keto white bread isn’t eggy or sandy-tasting like many other keto breads, either! And did I mention that this is bread from a mug in the microwave!? This bread will remind you of the white bread you know, love, and miss so much!

 

We were inspired to make this bread after we made our White Bread Keto Chaffle. The white bread Chaffle tasted absolutely amazing and was raved by so many of you. The only problem was that it required a mini waffle maker, and not everyone has one of those, and not everyone wants to buy one of those just to make a recipe they found on the internet. But, everyone does have a mug, and most have a microwave, so this 90 second keto white bread is for all!

 

What Is 90 Second Bread?

You have probably heard of 90 second bread before. There are tons of “90 second” or “60 second” creations out there, and they are all basically the same, whether they are for bread or cake. In fact, we have come up with a few ourselves, like our Keto Pumpkin Spice Mug CakeKeto Strawberry Upside-Down Mug Cake, and Chocolate Keto Mug Cake. In my humble opinion, all of our mug cakes (which are basically the same as a 90 second bread) are awesome! They are super simple and easy to make and they all taste delicious.

 

But I am not really a fan of most of the 90 second bread recipes that are out there. A lot of existing 90 second bread recipes taste like microwaved egg to me, which is to say… not that great.

 

I think you will find that this 90 second keto white bread recipe is different. It isn’t eggy or mushy, and it honestly doesn’t taste like it was microwaved at all. It tastes like a freshly baked bread that just happens to be keto friendly! My favorite way to eat this is toasted, trust me.

 

This 90 second keto white bread genuinely reminds me of the white bread I grew up with. Soft, a little bit chewy (but in a good way), and almost has a melt-in-your-mouth texture. This keto bread is flat out amazing!

 

Ingredients For 90-Second Keto Bread

Did I mention that this 90 second keto white bread is east to make? I am willing to bet that you already have everything you need to make this delicious bread in your fridge!

 

Just 6 simple ingredients are all you’ll need to make this 90 second keto bread:

  • Egg
  • Almond Flour
  • Mayo
  • Baking Powder
  • Water
  • Pinch of Salt

That’s it!

You could mix all of your ingredients together in a mug if that works best for you, but I found that it is much easier to mix all of the ingredients in a bowl before pouring the mixture into a mug before microwaving. It just seemed easier to mix the ingredients in a larger bowl than a small mug.

The first step in making this 90 second keto bread is to mix together all of your ingredients and pour them into a microwave safe mug.

Then, microwave your ingredients for 90 seconds. That’s it! You’re done. It’s seriously that simple. Just pop your bread out of the mug, slice it in half, toast and butter it if desired, and enjoy!

 

Best Ways To Enjoy 90 Second Keto White Bread

There is no wrong way to enjoy this delicious 90 second keto white bread. No matter how you enjoy it, you can’t go wrong. But if you’re looking for some suggestions, here are a few that might be helpful!

 

The best ways to enjoy your 90 second keto white bread are:

  • As a Burger; this bread is amazing as a bun! It is super soft and fluffy, but also sturdy enough to hold even the thickest of burgers.
  • Plain, toasted with butter. You can think of it as an English muffin! Once toasted, it really does take on some of the texture and taste of an English muffin.
  • Breakfast sandwiches. This bread would make an amazing bacon, egg, and cheese sandwich! Make your favorite breakfast sandwich with this 90 second keto white bread and you’ll start your day off right!
  • Lunch meat & cheese sandwiches. The classic. This is what this bread was made to do!
  • Toasted with cream cheese. You can think of this bread as a bagel if you toast it and load it with your favorite cream cheese or keto friendly jam (or both)!

Variations For 90 Second White Bread

Here are a few other ways to make this 90 second keto white bread if you’re looking for something different!

  • If you don’t have mayo, sour cream would be another good alternative
  • If you’d rather use coconut flour instead of almond flour, use 1 tbsp coconut flour
  • If you’d rather bake it in the oven, bake at 350 degrees F for about 15 minutes, until firm
  • Add garlic powder and other seasonings for different tastes

How To Store 90 Second Bread

Like most breads, this 90 second keto white bread is best enjoyed fresh. But, if you like to prepare your meals ahead of time, this bread will store very well in the fridge for a few days or freezer for longer. Just be sure to store it properly so that it doesn’t get dried our or freezer burnt. I recommend wrapping the bread in aluminum foil and then placing it in a zip loc bag.

 

This 90 second keto white bread will also stay fresh if stored in an air tight container either on the counter or in the fridge. If left out, this bread should stay fresh for 1-2 days. If in the fridge, it should stay fresh for at least a week!

About to try this in a large glass(Pyrex) loaf pan. Doubling the recipe to keep the thickness similar. I've been really wanting grilled cheese, and keto bread loaves or mixes are just ridiculous price. One of the very very few things I've ever used bread for for myself. If it turns out good I'll try it for bologna and cheese- once I find bologna that's low carb and hope that the bread works ok no toasted. With butter in a pan with cheese as long as it holds together should be fine, but untoasted the flavor and texture differences are more noticeable in any bread. It's silly when meats like that (bologna, hotdogs, etc but not spam- something everyone else loves friend but I'm not a fan, might have to try though)have more carbs than protein. Just recently found good natural skin, organic etc hotdogs that are 2g carbs for a foot long(and they were only $4 for 3 lbs at my local store. Yay) Once the bread is cooked- I'll check at 90 but might need longer in this case- I'll cut it into 2 squares from the big rectangle, then each square into 2 slices. Round just doesn't work well for grilled cheese and all my square back ng ceramics are too small. Reading my almost d and coconut flours, I'd definitely say to stick with almond for keto anyway. It's not a huge difference (3tbsp almond has 1 net carb and 1 tbsp coconut has 1.5) but the ratios are better and for grilled cheese I think almost d would just taste better. Either would be good for French toast I'd think. Will update with results(adjusted time mainly). Wondering if could be made even bigger, like 4x I stead of 2 in same dish, so that I could get 4 slices of "middle" bread per batch. If not, will have to look around for a good sized square dish for this. Will definitely try for English muffin/bagel substitute at some point as well- can't go wrong with a breakfast sandwich, and a plain cream cheese vehicle would be nice sometimes.

This tasted sooo eggy! I made this recipe specifically because it claimed not to taste so eggy. Guess I was looking for a miracle, as it does have a an egg in it. No big deal, it was still just as good as all the other 90 second keto breads out there, just let down by the claim. I will say I like the addition of mayo in this recipe for added fat.

I loved the bread, but not the size. What size mug or container do you use? My mug was definitely too small in diameter.

You could also use a square sandwich size container. Glass or plastic (depending on your thoughts on plastic in microwaves) Then it's more traditional sandwich bread shape.

Great question! My preferred mug is 16 oz. because it is 4 inches wide, which makes the bread spread out more; resulting in a thinner bread. I know a lot of people use the 8 oz. mugs, but it is just a matter of preference. I definitely suggest using a wider mug next time :)
