This recipe can be made in just a couple of simple steps with a few very common ingredients. Our recipe is not only simple, but delicious! This chicken is seriously so savory and flavorful! Some versions of this recipe are called “Crack Chicken” and it’s easy to see why! This chicken is addicting and you definitely won’t be able to stop after just one serving. And don’t worry, because it is completely keto friendly. ?

Another great thing about this recipe is that it goes well with almost any side, but we think that it pairs really well with some riced cauliflower! The “juice” and sauce from the chicken seeps into the cauliflower and it makes for a delicious duo. You could also pair this recipe with some broccoli, mashed cauliflower, or green beans. Whatever you choose, you can’t go wrong!

  1. Place the chicken breast in the bottom of the pressure cooker and season with salt and pepper. Add in cream cheese, ranch seasoning, and chicken broth.
  2. Place the lid on the pressure cooker and press the manual setting. Set the timer to 10 minutes, making sure the quick release valve is closed. Once the timer has gone off after cooking, do a quick release.
  3. Carefully open the lid. Remove the chicken and shred using a fork and knife. Place the chicken back into the instant pot and stir in the shredded cheese.
  4. Feel free to garnish with more shredded cheese and serve over cauliflower rice or any of these low carb rice substitutes. Enjoy!

1 lb Boneless skinless chicken breast
1 oz packets of Ranch seasoning
8 oz Cream cheese
1/2 cup Shredded cheddar cheese
1 cup Chicken broth

    Do you think this would work with ranch dressing instead of ranch seasoning?

      It would affect the moisture content, as well as the potency of the flavor. We would recommend the dry mix, but if you want to try it, please let us know how it goes!

    Would this recipe work with frozen chicken breasts? How would you alter the cooking time? Thanks!!

      In theory, it should work. It will produce more liquid, so it may not be as thick as the original recipe. It will also require more cook time. It depends on the size of the breasts. Thicker breasts require more time, even if the weight is about the same for the whole recipe. Sorry I cannot be of more help!

    Thanks!! I ended up using 2 lbs of boneless skinless thigh meat which was mostly defrosted. I doubled the recipe and added 5 min of cooking time and it came out perfect! I added broccoli steamed prior and my 5 and 3 year old loved it served over rice (huge win). Definitely adding this to our favorites, thanks for the recipe! 😊
