One my favorite all time desserts is lemon cake. It is perfectly sweet, a bit tangy, and always super moist and decadent. In my opinion, it is the perfect dessert. 

However, it’s not always convenient to make a whole cake. If you are a single person, or if you are the only one living a ketogenic lifestyle in your household, it isn’t very practical to make a whole cake. At least not all the time.

That is just one of the things that make these lemon cake chaffles so good: they don’t require the hassle of making a whole cake, baking a cake, cleaning up, or trying to scarf down a whole cake before it dries out.

What Is A Chaffle?

Good question. If you don’t know what a chaffle is, everything I just said probably made no sense. My bad.

Chaffles are one of the latest crazes to take the keto community by storm. The name “chaffle” is a combination of the words “cheese” and “waffle” because the original “chaffle” consisted of cheese and egg and was used as a bun replacement.

But, as things normally do, the original chaffle began to change and evolve and get even better.

Even though “chaffles” are still called “chaffles,” they are no longer just cheese and egg in a waffle maker. While they have kept the name, they have changed a lot! Hence, the awesome recipe you are currently viewing!

Best Mini Waffle Maker To Use:

One thing I should have mentioned is that chaffles are typically made in a mini waffle maker. And that makes sense, since chaffles started out as bun replacements.

No one needs a 12 inch bun for a sandwich… well, maybe. Actually, might not be that bad of an idea.

But if you’re looking for a waffle maker that will create the perfect sized chaffle that is roughly the same size as a hamburger bun or comparable to a slice of bread, you will want a mini waffle maker. Our recommendation is a Dash Mini Waffle maker.

How To Make Keto Lemon Cake Chaffles

Preheat the mini waffle maker. Add the Lakanto powdered sweetener.

Add in Heavy Whipping Cream.

Grate 1/4 tsp of Lemon Zest.

Place batter into the mini waffle maker and cook for 3-5 minutes.

Keto Lemon Cake Chaffles

Keto Lemon Cake Chaffles

1 tbsp Heavy whipping cream
1 tbsp Lakanto Powdered Sweetener
1 tbsp Coconut Flour
1 Egg
1/2 tsp Lemon Extract
1/4 tsp Lemon Zest
2 tbsp Lakanto Powdered Sweetener
1-2 tsp Lemon Juice

Preheat the mini waffle maker.
Add all of the ingredients for the chaffle into a mixing bowl, and blend on high until smooth and creamy.
Place the batter into the mini waffle maker, and cook for 3-5 minutes until your desired level of doneness has been reached.
Whisk together the ingredients for the glaze in a mixing bowl, adding lemon juice until your desired consistency has been reached.
Pour the glaze over the chaffle and serve.

      Yes, one tablespoon of lemon juice is equal to 1/2 teaspoon of lemon extract. It will change the carb count slightly. Enjoy!

    No matter how hard I try I can not get to 5.5 total carbs. The lakanto here in Canada must be different? I am at over 12 total carbs for the sweetener..and swerve is similiar
