Low Carb Chocolate Mousse

Introduction
Chocolate mousse was my first low-carb dessert love. Back at the start it was just heavy cream and unsweetened cocoa, beaten together, and that was enough to get through a week.
This version has two more ingredients in it and tastes considerably better.

The Method, In Full
Everything into one bowl. Beat for about three minutes until it holds stiff peaks.
That is it. That is the recipe.
Which Is Also Why It Is Easy to Adjust
Nothing here has to set or bake, so the mixture in the bowl is the finished thing — taste it and change it. More cocoa if you want it darker, more sweetener if you want it sweeter.
For the sweetener, Lakanto monk fruit or stevia packets are the granulated ones we use. Making it from scratch instead of from a box of instant pudding is mostly about getting to make that call yourself.

Directions

Combine all ingredients in a large mixing bowl.

Beat with an electric mixer until stiff peaks form, about three minutes, then serve.

Top with whipped cream and garnish with unsweetened cocoa nibs, if desired.
Notes
- Serve immediately, or cover and refrigerate until ready to serve.
On Top, and Elsewhere
Whipped cream on top — yes, whipped cream on whipped cream — with unsweetened cocoa nibs or Lily’s chocolate chips for some crunch.
We remade it in mason jars once with ChocZero bark broken over the top, which is the version in the photo below.
It would also work as a cake icing. I am a buttercream person myself; my mom loves a whipped cream icing on a cake.
