And it comes in lots of flavors! There’s the standard affair of vanilla, chocolate, strawberry, and cookies n’ cream. Then you have the flavors for the adventurous ones, such as sea salt caramel, bubblegum, pumpkin spice, and many more.

But despite your flavor, typical ice cream is made with lots of sugar, which is a no-no for keto. Thankfully, there are many keto-friendly ice cream brands out there. Or, you can make one yourself.

With our keto vanilla ice cream recipe, you can have low-carb ice cream anytime. And you don’t even need an ice cream maker or machine for this one. All you need is a refrigerator with a freezer.

3 cups Heavy Whipping Cream, divided
2 tbsp Butter
1/3 cup Lakanto Powdered Monk Fruit Sweetener
1/2 tsp Xanthan Gum

Directions

In a saucepan, add 1 ½ cups heavy whipping cream.
Heat it over medium heat.

Add 2 tbsp butter to the saucepan.

Whisk in Lakanto powdered sweetener into the saucepan.
Bring the mixture to a low boil, stirring occasionally.

Remove the mixture from the heat and whisk in the xanthan gum a little at a time until smooth.
Make sure that there are no clumps of xanthan gum left.

Whisk in the vanilla extract.

Whisk in the remaining 1 ½ cups heavy whipping cream.
Mix until all the ingredients are well combined.

Transfer your heavy cream mixture to a loaf pan.
Let it chill in the refrigerator for about 2 hours. Stir every 30 minutes until your keto vanilla ice cream reaches its desired consistency.

Once the ice cream has chilled enough and reached its desired consistency, transfer it to your freezer.
Freeze your ice cream until it firms up and becomes solid. To make sure that ice crystals don't form on your ice cream, you can tightly wrap the loaf pan in plastic wrap or transfer it to a freezer-safe container. Take your keto vanilla ice cream ice out of the freezer once it has become solid enough.

The high-fat content also helps prevent the ice cream from freezing into a solid block, which is how it can achieve a scoopable consistency even when frozen.

In this recipe, we'll be dividing the heavy whipping cream into two. The first half, mixed with butter and sweetener, will be heated up and brought to a low boil. The other half will be added later on.

Lakanto Powder Monk Fruit Sweetener

We want our keto vanilla ice cream to be sugar-free so that we can keep its carb count as low as possible. So we'll be using Lakanto Powder Monk Fruit Sweetener instead. It's a keto-friendly sugar substitute that's all-natural, zero-glycemic, and has no aftertaste.
