Keto White Chocolate Macadamia Nut Cookies
Introduction
If you’ve tried our Thick and Soft Keto Lemon Cookies, you will be familiar with the texture and thickness of these awesome keto white chocolate chip macadamia nut cookies. If you haven’t, I highly recommend that you try them if you like lemon cookies! Like our lemon cookies, these keto white chocolate macadamia nut cookies are super soft and chewy, so much so that they almost seem to melt in your mouth. The difference being though that the macadamia nuts in these cookies offer a yummy crunch.

How To Make Keto White Chocolate Macadamia Nut Cookies

In a large bowl, combine almond flour, coconut flour, cream of tartar, baking soda, xanthan gum, and salt
In a separate bowl, mix together the butter, Lakanto Classic Monkfruit, Lakanto Golden Monkfruit (brown sugar sub), eggs, and vanilla extract
Slowly add and combine the wet ingredients to the dry ingredients to form dough.
Fold in chopped macadamia nuts and ChocZero’s white chocolate chips.
Scoop cookie dough onto parchment lined paper. Flatten slightly to desired shape and bake for 12-15 minutes.
Tip: Press some ChocZero white chocolate chips on top of the cookies as well for presentation.
Using Lakanto Golden and Classic Monkfruit Sweetener
As usual, we used Lakanto’s Monkfruit to sweeten these delicious keto white chocolate macadamia nut cookies. Specifically, we used a combination of Lakanto’s Golden Monkfruit and Lakanto’s Classic Monkfruit. Golden Monkfruit is Lakantos version of brown sugar which is what is used in combination with regular sugar in regular macadamia nut cookies.
