I don’t know about you, but vegetables are not necessarily my idea of a delicious snack. There is no denying that they are healthy and often necessary in a well-balanced diet, but they just aren’t typically something that get me excited.

However, that is starting to change ever since we discovered Loaded Parmesan Zucchini Slices! They are so addicting it’s unreal! And I don’t even feel bad about it because they are so healthy!

Zucchini, in my mind, was a soggy, slimy vegetable that belonged no where near my plate, but these loaded zucchini parmesan slices are nothing like that at all! They are crunchy, savory, and so, SO delicious! If you’re struggling to come up with ways to make veggies palatable, look no further! These zucchini slices are a game changer!

I mean, come on, let’s just admit that ANYTHING topped with bacon and ranch has to be decent at the very least. That combined with the refreshing crunch of some zucchini and the savoriness of parmesan and you have literally got the recipe for deliciousness! 

Trust me when I say that you are going to LOVE zucchini after you try this recipe!

Easy Low Carb Keto Snack

Easy, healthy snacks are not always easy to come by. Often times, the best tasting snacks are the most dangerous ones! It is a sad, sad reality for sure. But the good news is that these loaded Parmesan zucchini slices definitely are not one of those snacks that you have to feel guilty about enjoying! 

Actually, you can feel confident as you enjoy your 5th, 6th, 7th, or… 20th slice! These loaded zucchini slices are super low in carbs and are high in fat making them the PERFECT keto snack!

In addition to tasting amazing, they are also amazingly easy to make! All you’ll need are a few ingredients which you probably already have in your pantry! There’s nothing fancy or complicated here, just deliciousness!

The ingredients below are all that you will need to whip up these super easy loaded zucchini slices:

We have found that the easiest way to slice zucchini (and basically any other fruit or veggie that can be sliced) is with this amazing mandolin slicer from Amazon! It makes slicing fruits and veggies super fast and simple, but it also creates perfectly consistent slices, ensuring that everything comes out the same way every time. 

We have all probably fallen victim to the lopsided slice of tomato on a burger (you know, where one side of the slice is razor thin and the other is 2 inches thick) or the too-thin-to-bake-without-burning slice of zucchini. This mandolin slicer is a game changer when ti comes to slicing things in the kitchen. And best of all, it’s super easy to clean and is very affordable!  This is without a doubt something that every kitchen could use!

How To Make Keto Loaded Parmesan Zucchini Slices

Preheat the oven to 350 degrees. Add the sliced zucchini to a parchment lined baking sheet, and bake for 5 minutes.

Remove tray from the oven, sprinkle over ranch seasoning.

Sprinkle in garlic powder.

Add cooked bacon crumbles.

Bake for another 10 minutes. For a crispier finish, place the slices under the broiler for several minutes before serving.

Storage Tips

Once these yummy slices of goodness have been baked, they can be stored in an airtight container in the fridge for up to two days (woo hoo for three days worth of snacks!)! Then, when you’re ready to heat them back up, just pop them in the oven and bake at 350 degrees for about 5 minutes or until warmed.

If you opt to reheat in the microwave (which I don’t necessarily recommend, since the microwave tends to make things soggy in my opinion), just reheat until warm!

Variations of Keto Loaded Parmesan Zucchini Slices

If you want to change things up a bit, there are infinite possibilities for these loaded Parmesan Zucchini slices! 

If you want to spice things up, add your favorite Cajun Seasoning in addition to, or in place of, the ranch seasoning. Or, perhaps you prefer Trader Joe’s insanely popular Everything But the Bagel seasoning.

You really can’t go wrong with whatever you may choose!

Or, for some extra flavor, dip these loaded zucchini slices in your favorite keto friendly dip or cheese, like this jalapeño cilantro dip! Even though this keto snack is already full of flavor all on its own, there is also room for more flavor!
