Ingredients

2 cup Shredded mozzarella cheese
3 oz. Cream cheese, softened
1 ½ cup Almond flour
½ tsp. Baking powder
¼ tsp. Xanthan gum
½ tsp. Garlic powder divided
½ tsp. Italian seasoning divided
1 Large egg
1 Tbsp. Flaxseed meal
Pinch of salt
2 Tbsp. Butter
3 cup Raw spinach
1 tsp Minced garlic

Directions

Add the butter to a skillet over medium heat.

Stir in the garlic and saute for 30 seconds.

Mix in the spinach, and cook until wilted. Remove from the heat and let cool.

In a bowl that is microwave safe, combine the mozzarella and cream cheese.

Heat for 30 seconds at a time until melted and well combined into a dough.

Add the cheese dough to a mixing bowl with the almond flour, baking powder, xanthan gum, ¼ tsp of the garlic powder, ¼ tsp of the Italian seasoning, pinch of salt, egg and flaxseed meal. Beat on high until well combined.

Divide the dough in half, and roll each half into a rectangular shape that is roughly the same size as the other.

On one half of the dough, spread the spinach mixture all over the surface.

Place the other layer of dough over the first, and press the edges closed.

Use a cookie cutter to cut out the outline of a Christmas tree.

Make small cuts on each side of the tree in the same position as the other.

Twist each cut piece of dough to form branches.

You can form the extra pieces of dough and filling that you cut off into balls to serve alongside the tree for zero waste.

Top with the remaining garlic powder and Italian seasoning.

Bake for 20-25 minutes until golden brown.
