Keto Chocolate Snowball Cookies

Earlier this month we created a Low Carb/Keto version of the classic pecan snowball cookies. Now, we are stepping it up a notch and came up with these buttery chocolate snowball cookies for you to add to your baking list during the holidays!

If you’re on a keto or low carb diet, your going to love me for this chocolatey recipe.. trust me. These holiday cookies are very quick and simple to make and best of all you honestly can’t even tell that it’s sugar free and low carb. My dad, who isn’t on the keto diet, has the biggest sweet tooth and he ate one after another and couldn’t tell the difference between these and a regular sugary cookie.

How To Make Keto Chocolate Snowball Cookies:

  1. Make the dough by blending together the butter, swerve confectioners, unsweetened cocoa powder, and vanilla until creamy. Then blend in almond flour.
  2. Optional: Mix Lilys chocolate chips in dough.
  3. Line a baking sheet with parchment paper or silpat. Roll the dough into 1″ balls in the palm of your hand. Bake for 10 minutes.
  4. Immediately roll the cookie balls in swerve confectioners sugar for first coating. Allow the cookies to cool completely and then roll them in the confectioners sugar again.

Allow to cool completely before storing in an airtight container at room temperature.

Directions

Preheat oven to 375. Line cookie sheet with parchment paper or silpat.
